Ingredients

  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef or game stock
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Season the wild game meat with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Brown the meat in batches and set aside.
  3. Add the onion, carrots, and celery to the pot and cook until softened.
  4. Stir in the garlic and cook for another minute.
  5. Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
  6. Return the browned meat to the pot and add the stock, bay leaves, and thyme.
