Ingredients
- 2 lbs mixed wild game meat (such as venison, rabbit, or wild boar), cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef or game stock
- 2 bay leaves
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Season the wild game meat with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Brown the meat in batches and set aside.
- Add the onion, carrots, and celery to the pot and cook until softened.
- Stir in the garlic and cook for another minute.
- Pour in the red wine and deglaze the pot, scraping up any browned bits from the bottom.
- Return the browned meat to the pot and add the stock, bay leaves, and thyme.
- Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat is tender.
- Season with additional salt and pepper if needed.
