Wu Xiang Chao Fan (five Spice Fried Rice)

Ingredients

  • 3 cups cooked rice, chilled
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/2 cup frozen peas
  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon five spice powder
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the skillet and set aside.
  3. Heat the remaining 1 tablespoon of oil in the same skillet. Add the chopped onion, minced garlic, diced carrot, and frozen peas. Stir-fry for 3-4 minutes until the vegetables are tender.
  4. Add the chilled cooked rice to the skillet. Use a spatula to break up any clumps and stir-fry for 2-3 minutes.
  5. Add the cooked eggs back to the skillet. Pour in the soy sauce and sprinkle the five spice powder over the rice. Stir well to combine all the ingredients.
  6. Season with salt and pepper to taste. Continue to stir-fry for another 2-3 minutes until everything is heated through.
  7. Transfer the fried rice to a serving dish and serve hot.
