Wunapu (island Style Fried Rice)

Ingredients

  • 3 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1/2 cup diced onion
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of oil in a large pan or wok over medium heat.
  2. Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
  3. Heat the remaining oil in the same pan and sauté the onions, garlic, and ginger until fragrant.
  4. Add the mixed vegetables and stir-fry for 2-3 minutes.
  5. Add the cooked rice to the pan and stir to combine with the vegetables.
  6. Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes.
  7. Finally, add the scrambled eggs back to the pan and toss everything together. Season with salt and pepper to taste.
  8. Remove from heat and serve the Wunapu hot.
