Wunapu (island Style Fried Rice)
Wunapu, or Island Style Fried Rice, is a popular dish in Solomon Islands cuisine. This flavorful and aromatic fried rice is a staple in many households and is perfect for a quick and satisfying meal.
Ingredients
- 3 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn)
- 1/2 cup diced onion
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons cooking oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, grated
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of oil in a large pan or wok over medium heat.
- Add the beaten eggs and scramble until cooked. Remove from the pan and set aside.
- Heat the remaining oil in the same pan and sauté the onions, garlic, and ginger until fragrant.
- Add the mixed vegetables and stir-fry for 2-3 minutes.
- Add the cooked rice to the pan and stir to combine with the vegetables.
- Pour the soy sauce over the rice and mix well. Cook for an additional 2-3 minutes.
- Finally, add the scrambled eggs back to the pan and toss everything together. Season with salt and pepper to taste.
- Remove from heat and serve the Wunapu hot.
