Wunapu (island Style Stir-fry)

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium-high heat.
  2. Add the sliced chicken and cook until browned, then remove from the pan and set aside.
  3. In the same pan, sauté the onion, garlic, and ginger until fragrant.
  4. Add the mixed vegetables and stir-fry for a few minutes until they are tender-crisp.
  5. Return the cooked chicken to the pan and stir in the soy sauce and oyster sauce. Season with salt and pepper to taste.
  6. Cook for an additional 2-3 minutes, stirring constantly, until everything is well combined and heated through.
  7. Remove from heat and serve the Wunapu stir-fry hot with steamed rice.
