  • 2 sprigs of fresh rosemary
  • 2 bay leaves

  • 2 cans (15 oz each) white beans, drained and rinsed
  • Chopped fresh parsley for garnish

Instructions

  1. Season the lamb chunks with salt and pepper.
  2. Heat the olive oil in a large Dutch oven over medium-high heat. Brown the lamb in batches until golden brown on all sides. Remove and set aside.
  3. Add the chopped onion to the pot and sauté until softened. Add the minced garlic and cook for another minute.
  4. Stir in the diced tomatoes and cook for 5 minutes, allowing them to break down and release their juices.
  5. Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom.

  7. After 1.5 hours, add the white beans to the pot and continue to cook, uncovered, for another 30 minutes until the lamb is tender and the beans are heated through.
  8. Adjust the seasoning with salt and pepper, if needed. Discard the rosemary sprigs and bay leaves.
