Ingredients
- 2 lbs lamb shoulder, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tomatoes, diced
- 1 cup dry white wine
- 2 cups chicken or vegetable broth
- 2 sprigs of fresh rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 cans (15 oz each) white beans, drained and rinsed
- Chopped fresh parsley for garnish
Instructions
- Season the lamb chunks with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Brown the lamb in batches until golden brown on all sides. Remove and set aside.
- Add the chopped onion to the pot and sauté until softened. Add the minced garlic and cook for another minute.
- Stir in the diced tomatoes and cook for 5 minutes, allowing them to break down and release their juices.
- Pour in the white wine and deglaze the pot, scraping up any browned bits from the bottom.
- Return the lamb to the pot and add the broth, rosemary, and bay leaves. Bring to a simmer, then reduce the heat to low, cover, and cook for 1.5 hours, stirring occasionally.
- After 1.5 hours, add the white beans to the pot and continue to cook, uncovered, for another 30 minutes until the lamb is tender and the beans are heated through.
- Adjust the seasoning with salt and pepper, if needed. Discard the rosemary sprigs and bay leaves.
