Xia Bai Chao Fan (shrimp And Egg White Fried Rice)
Xia Bai Chao Fan, or Shrimp and Egg White Fried Rice, is a classic dish in Huaiyang Cuisine known for its delicate flavors and beautiful presentation. This dish is light, fluffy, and packed with umami from the combination of fresh shrimp and egg whites.
Ingredients
- 2 cups cooked jasmine rice
- 8 oz fresh shrimp, peeled and deveined
- 4 egg whites
- 2 tbsp vegetable oil
- 1/2 cup diced carrots
- 1/2 cup frozen peas
- 2 green onions, thinly sliced
- 1/4 tsp salt
- 1/4 tsp white pepper
- 1/2 tsp sesame oil
Instructions
- Heat 1 tablespoon of vegetable oil in a wok over medium heat. Add the shrimp and stir-fry until they turn pink. Remove the shrimp from the wok and set aside.
- In the same wok, add the remaining tablespoon of vegetable oil. Add the carrots and peas, and stir-fry for 2-3 minutes.
- Push the vegetables to the side of the wok, pour the egg whites into the center, and scramble until just set.
- Add the cooked rice, shrimp, salt, and white pepper to the wok. Stir-fry for 2-3 minutes until everything is heated through.
- Drizzle with sesame oil and add the sliced green onions. Toss everything together until well combined.
- Transfer the fried rice to a serving dish and serve hot.
