Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 scallions, finely chopped
  • 1 teaspoon grated ginger
  • 1 teaspoon soy sauce
  • 1/2 teaspoon sesame oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup water
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, mix the shrimp, scallions, ginger, soy sauce, sesame oil, salt, and black pepper.
  2. In a separate bowl, whisk the flour and water to make a smooth batter.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour a ladleful of the batter into the skillet and spread it evenly.
  5. Cook for 2 minutes, then place a portion of the shrimp mixture on top of the pancake.
  6. Cover the shrimp with another layer of batter and cook for 3-4 minutes until golden brown.
  7. Flip the pancake and cook for an additional 3-4 minutes until the shrimp is cooked through.
  8. Repeat with the remaining batter and shrimp mixture.
  9. Serve the Xia Bing hot with a dipping sauce of your choice.
