Ingredients
- 1 pound fresh shrimp, peeled and deveined
- 2 scallions, finely chopped
- 1 teaspoon grated ginger
- 1 teaspoon soy sauce
- 1/2 teaspoon sesame oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup all-purpose flour
- 1 cup water
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix the shrimp, scallions, ginger, soy sauce, sesame oil, salt, and black pepper.
- In a separate bowl, whisk the flour and water to make a smooth batter.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour a ladleful of the batter into the skillet and spread it evenly.
- Cook for 2 minutes, then place a portion of the shrimp mixture on top of the pancake.
- Cover the shrimp with another layer of batter and cook for 3-4 minutes until golden brown.
- Flip the pancake and cook for an additional 3-4 minutes until the shrimp is cooked through.
- Repeat with the remaining batter and shrimp mixture.
- Serve the Xia Bing hot with a dipping sauce of your choice.
