Xia Chao Fan (shrimp Fried Rice)

Ingredients

  • 2 cups cooked white rice
  • 1/2 lb shrimp, peeled and deveined
  • 2 eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1/2 tsp sesame oil
  • 3 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
  2. Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the wok and set aside.
  3. Heat the remaining vegetable oil in the same wok. Add the minced garlic and stir-fry for 30 seconds.
  4. Pour in the beaten eggs and scramble until they are just set.
  5. Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  6. Add the cooked rice, soy sauce, oyster sauce, and sesame oil to the wok. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
  7. Return the cooked shrimp to the wok and toss everything together until well combined.
  8. Season with salt and pepper to taste.
  9. Transfer the shrimp fried rice to a serving dish and serve hot.
