Xia Chao Fan (shrimp Fried Rice)
Xia Chao Fan, or Shrimp Fried Rice, is a popular dish in Pakistani Chinese cuisine. This flavorful and aromatic fried rice is a perfect combination of tender shrimp, fluffy rice, and a variety of vegetables, all stir-fried to perfection.
Ingredients
- 2 cups cooked white rice
- 1/2 lb shrimp, peeled and deveined
- 2 eggs, beaten
- 1 cup mixed vegetables (carrots, peas, corn)
- 3 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp sesame oil
- 3 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat.
- Add the shrimp and stir-fry for 2-3 minutes until pink and cooked through. Remove the shrimp from the wok and set aside.
- Heat the remaining vegetable oil in the same wok. Add the minced garlic and stir-fry for 30 seconds.
- Pour in the beaten eggs and scramble until they are just set.
- Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
- Add the cooked rice, soy sauce, oyster sauce, and sesame oil to the wok. Stir-fry for 3-4 minutes, breaking up any clumps of rice.
- Return the cooked shrimp to the wok and toss everything together until well combined.
- Season with salt and pepper to taste.
- Transfer the shrimp fried rice to a serving dish and serve hot.
