Xia Jiao, also known as Shrimp Dumplings, is a popular dish in Guangxi Cuisine. These delicate dumplings are filled with a flavorful mixture of shrimp and seasonings, wrapped in a thin, translucent wrapper, and then steamed to perfection.

Xia Jiao (shrimp Dumplings)

Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 green onions, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • 20 round dumpling wrappers

Instructions

  1. In a food processor, pulse the shrimp until finely chopped.
  2. Transfer the chopped shrimp to a bowl and add garlic, ginger, green onions, soy sauce, sesame oil, and white pepper. Mix well.
  3. Place a small spoonful of the shrimp mixture in the center of each dumpling wrapper.
  4. Moisten the edges of the wrapper with water, then fold and pleat to seal the dumplings.
  5. Place the dumplings in a steamer lined with parchment paper and steam for 8-10 minutes until cooked through.
