Xi'an Biang Biang Noodles (Xi'an Biang Biang Mian)
Xi'an Biang Biang Mian, also known as Xi'an Biang Biang Noodles, is a popular dish from Shaanxi Cuisine, known for its wide, hand-pulled noodles and savory, spicy flavors.
Ingredients
- 500g all-purpose flour
- 250ml water
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 200g ground pork
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp chili oil
- 1 tsp Sichuan peppercorns
- 2 green onions, chopped
Instructions
- In a large bowl, mix the flour, water, vegetable oil, and salt to form a dough. Knead the dough for 10 minutes, then cover and let it rest for 30 minutes.
- Divide the dough into 4 equal parts. Take one part and roll it into a long, flat strip. Pull the strip to stretch it into a wide noodle, then repeat with the remaining dough.
- Boil the noodles in a pot of water for 3-5 minutes, then drain and set aside.
- In a pan, cook the ground pork and garlic until browned. Add the soy sauce, chili oil, and Sichuan peppercorns, then stir in the cooked noodles.
- Garnish with chopped green onions and serve hot.
