Xi'an Cold Noodles with Sesame Sauce (Xi'an Liang Mian)

Ingredients

  • 8 oz (225g) fresh or dried Chinese wheat noodles
  • 1/4 cup (60ml) soy sauce
  • 3 tbsp (45ml) Chinese black vinegar
  • 2 tbsp (30ml) sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp (15g) sugar
  • 1/2 tsp (2.5g) chili oil (optional)
  • 1/4 cup (35g) roasted peanuts, crushed
  • 2 green onions, thinly sliced

Instructions

  1. Cook the noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  2. In a small bowl, whisk together soy sauce, black vinegar, sesame oil, minced garlic, sugar, and chili oil (if using) to make the sauce.
  3. Pour the sauce over the cold noodles and toss to coat evenly.
  4. Sprinkle crushed peanuts and sliced green onions on top before serving.
