Xi'an Spicy Lamb Skewers (Xi'an La Yang Rou Chuan)

Ingredients

  • 1 lb lamb, cut into cubes
  • 2 tbsp cumin powder
  • 2 tbsp chili powder
  • 1 tbsp Sichuan peppercorn powder
  • 1/4 cup soy sauce
  • 1/4 cup vegetable oil
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 8 bamboo skewers, soaked in water

Instructions

  1. In a bowl, mix cumin powder, chili powder, Sichuan peppercorn powder, soy sauce, and vegetable oil to make the marinade.
  2. Add the lamb cubes to the marinade and coat them evenly. Let it marinate for at least 1 hour in the refrigerator.
  3. Thread the marinated lamb cubes onto the soaked bamboo skewers.
  4. Heat a stovetop grill or grill pan over medium-high heat. Grill the lamb skewers for about 8-10 minutes, turning occasionally, until they are cooked to your desired doneness.
  5. Remove the skewers from the grill and sprinkle chopped green onions and cilantro on top before serving.
