Xi'an Hong Shao Chang Fen, also known as Xi'an Style Braised Pork Intestines, is a classic dish from Shaanxi Cuisine known for its rich flavors and tender texture.
Ingredients
- 1 lb pork intestines, cleaned and cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tbsp sugar
- 2 slices ginger
- 2 cloves garlic, minced
- 2 green onions, chopped
- 2 cups water
- 1 tbsp vegetable oil
Instructions
- In a bowl, marinate the pork intestines with soy sauce, dark soy sauce, and Shaoxing wine for 15 minutes.
- Heat vegetable oil in a pot over medium heat. Add sugar and cook until it caramelizes.
- Add ginger, garlic, and green onions. Stir-fry until fragrant.
- Add the marinated pork intestines and cook until browned.
- Pour in water and bring to a boil. Then, reduce heat to low and simmer for 2 hours until the intestines are tender.
- Season with salt and pepper to taste.
- Serve the Xi'an Hong Shao Chang Fen hot with steamed rice.
