Ingredients

  • 1 lb pork intestines, cleaned and cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 2 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 2 cups water
  • 1 tbsp vegetable oil

Instructions

  1. In a bowl, marinate the pork intestines with soy sauce, dark soy sauce, and Shaoxing wine for 15 minutes.
  2. Heat vegetable oil in a pot over medium heat. Add sugar and cook until it caramelizes.
  3. Add ginger, garlic, and green onions. Stir-fry until fragrant.
  4. Add the marinated pork intestines and cook until browned.
  5. Pour in water and bring to a boil. Then, reduce heat to low and simmer for 2 hours until the intestines are tender.
  6. Season with salt and pepper to taste.
  7. Serve the Xi'an Hong Shao Chang Fen hot with steamed rice.
