Xi'an Style Braised Pork Knuckles (Xi'an Hong Shao Zhu Jiao)
Xi'an Hong Shao Zhu Jiao is a classic dish from Shaanxi Cuisine, featuring tender and flavorful braised pork knuckles with a rich and aromatic sauce.
Ingredients
- 4 pork knuckles
- 1 cup soy sauce
- 1/2 cup Chinese cooking wine
- 1/4 cup sugar
- 6 slices ginger
- 4 green onions, cut into 2-inch pieces
- 2 star anise
- 1 cinnamon stick
- 3 cups water
Instructions
- In a large pot, blanch the pork knuckles in boiling water for 5 minutes. Remove and rinse under cold water.
- In the same pot, add soy sauce, cooking wine, sugar, ginger, green onions, star anise, and cinnamon stick. Stir and bring to a boil.
- Add the pork knuckles back into the pot. Pour in water until the pork knuckles are submerged.
- Cover and simmer over low heat for 2 hours, or until the pork knuckles are tender.
- Remove the pork knuckles from the pot and transfer to a serving plate.
- Strain the braising liquid and pour it over the pork knuckles.
- Serve hot and enjoy!
