Xi'an Style Braised Pork Knuckles (Xi'an Hong Shao Zhu Jiao)

Ingredients

  • 4 pork knuckles
  • 1 cup soy sauce
  • 1/2 cup Chinese cooking wine
  • 1/4 cup sugar
  • 6 slices ginger
  • 4 green onions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 3 cups water

Instructions

  1. In a large pot, blanch the pork knuckles in boiling water for 5 minutes. Remove and rinse under cold water.
  2. In the same pot, add soy sauce, cooking wine, sugar, ginger, green onions, star anise, and cinnamon stick. Stir and bring to a boil.
  3. Add the pork knuckles back into the pot. Pour in water until the pork knuckles are submerged.
  4. Cover and simmer over low heat for 2 hours, or until the pork knuckles are tender.
  5. Remove the pork knuckles from the pot and transfer to a serving plate.
  6. Strain the braising liquid and pour it over the pork knuckles.
  7. Serve hot and enjoy!
