Xi'an Style Stewed Pork Belly (Xi'an Hong Shao Rou)

Ingredients

  • 500g pork belly, cut into chunks
  • 3 slices ginger
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • 1 star anise
  • 1 cinnamon stick
  • 3 tbsp soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp Shaoxing wine
  • 1 tbsp sugar
  • 1 cup water

Instructions

  1. In a pot, blanch the pork belly in boiling water for 5 minutes. Remove and set aside.
  2. Heat a tablespoon of oil in the pot and sauté the ginger, garlic, and green onions until fragrant.
  3. Add the blanched pork belly, star anise, and cinnamon stick to the pot.
  4. Pour in the soy sauce, dark soy sauce, Shaoxing wine, and sugar. Stir to coat the pork belly.
  5. Add water to the pot, cover, and simmer for 1.5 to 2 hours until the pork is tender.
  6. Once the pork is tender, uncover the pot and allow the sauce to thicken.
  7. Serve the Xi'an Hong Shao Rou hot with steamed rice or noodles.
