Xiang Chao Shui Xian (fragrant Fried Eel)
Xiang Chao Shui Xian, or Fragrant Fried Eel, is a classic dish from Zhejiang Cuisine known for its savory and aromatic flavors. This recipe combines tender eel with a fragrant blend of spices and sauces, creating a delicious and satisfying dish.
Ingredients
- 500g fresh eel, cleaned and cut into pieces
- 3 tbsp soy sauce
- 2 tbsp Shaoxing wine
- 1 tbsp sugar
- 2 tbsp vegetable oil
- 3 cloves garlic, minced
- 1 inch ginger, julienned
- 2 green onions, chopped
- 1 tsp cornstarch
- Salt and pepper to taste
Instructions
- In a bowl, mix the soy sauce, Shaoxing wine, and sugar. Add the eel pieces and marinate for 10 minutes.
- Heat the vegetable oil in a wok over medium-high heat. Add the garlic, ginger, and green onions, and stir-fry for 1-2 minutes until fragrant.
- Add the marinated eel pieces to the wok and stir-fry for 5-6 minutes until the eel is cooked through.
- In a small bowl, mix the cornstarch with 2 tbsp of water to make a slurry. Pour the slurry into the wok and stir well to thicken the sauce.
- Season with salt and pepper to taste. Serve the Fragrant Fried Eel hot with steamed rice.
