Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup cashews
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- Salt and pepper to taste
Instructions
- In a small bowl, mix together soy sauce, oyster sauce, rice vinegar, and sugar. Set aside.
- Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until no longer pink. Remove chicken from the wok and set aside.
- In the same wok, add cashews and stir-fry until lightly browned. Remove from the wok and set aside.
- Add garlic, ginger, and green onions to the wok. Stir-fry for 1-2 minutes until fragrant.
- Return the chicken and cashews to the wok. Pour the sauce over the chicken and cashews. Stir-fry for another 2-3 minutes until everything is well coated and heated through.
- Season with salt and pepper to taste. Serve hot and enjoy!
