Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup cashews
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 green onions, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a small bowl, mix together soy sauce, oyster sauce, rice vinegar, and sugar. Set aside.
  2. Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until no longer pink. Remove chicken from the wok and set aside.
  3. In the same wok, add cashews and stir-fry until lightly browned. Remove from the wok and set aside.
  4. Add garlic, ginger, and green onions to the wok. Stir-fry for 1-2 minutes until fragrant.
  5. Return the chicken and cashews to the wok. Pour the sauce over the chicken and cashews. Stir-fry for another 2-3 minutes until everything is well coated and heated through.
  6. Season with salt and pepper to taste. Serve hot and enjoy!
