Xiang Liang Mi Fan (fragrant Lotus Leaf Rice)

Ingredients

  • 2 cups jasmine rice
  • 4 dried lotus leaves
  • 200g pork belly, diced
  • 100g shiitake mushrooms, sliced
  • 4 scallions, chopped
  • 4 slices ginger
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 cups chicken broth

Instructions

  1. Soak the dried lotus leaves in water for 2 hours until they become soft. Drain and set aside.
  2. Rinse the jasmine rice and drain well. Set aside.
  3. In a wok, heat some oil over medium heat. Add the pork belly and cook until slightly browned.
  4. Add the shiitake mushrooms, scallions, and ginger slices. Stir-fry for 2 minutes.
  5. Stir in the soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Cook for another 2 minutes.
  6. Add the rice to the wok and stir to combine with the meat and mushroom mixture.
  7. Transfer the rice mixture to a lotus leaf, then wrap it into a tight parcel. Repeat with the remaining rice and lotus leaves.
  8. Place the lotus leaf parcels in a steamer and steam for 20 minutes until the rice is cooked through.
  9. Serve the Fragrant Lotus Leaf Rice hot and enjoy!
