Xiang Liang Mi Fan (fragrant Lotus Leaf Rice)
Xiang Liang Mi Fan, or Fragrant Lotus Leaf Rice, is a traditional dish from Huaiyang Cuisine that is known for its aromatic and flavorful combination of rice, meats, and vegetables. This dish is often enjoyed during special occasions and gatherings.
Ingredients
- 2 cups jasmine rice
- 4 dried lotus leaves
- 200g pork belly, diced
- 100g shiitake mushrooms, sliced
- 4 scallions, chopped
- 4 slices ginger
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp Shaoxing wine
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 cups chicken broth
Instructions
- Soak the dried lotus leaves in water for 2 hours until they become soft. Drain and set aside.
- Rinse the jasmine rice and drain well. Set aside.
- In a wok, heat some oil over medium heat. Add the pork belly and cook until slightly browned.
- Add the shiitake mushrooms, scallions, and ginger slices. Stir-fry for 2 minutes.
- Stir in the soy sauce, oyster sauce, Shaoxing wine, sugar, salt, and white pepper. Cook for another 2 minutes.
- Add the rice to the wok and stir to combine with the meat and mushroom mixture.
- Transfer the rice mixture to a lotus leaf, then wrap it into a tight parcel. Repeat with the remaining rice and lotus leaves.
- Place the lotus leaf parcels in a steamer and steam for 20 minutes until the rice is cooked through.
- Serve the Fragrant Lotus Leaf Rice hot and enjoy!
