Ingredients

  • 300g rice noodles
  • 500ml vegetable broth
  • 100g sliced mushrooms
  • 100g sliced carrots
  • 50g snow peas
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • Chopped green onions for garnish

Instructions

  1. Boil the rice noodles according to package instructions, then drain and set aside.
  2. In a pot, bring the vegetable broth to a simmer and add the mushrooms, carrots, and snow peas. Cook for 5 minutes.
  3. Stir in the soy sauce, sesame oil, sugar, and white pepper. Simmer for another 2 minutes.
  4. Divide the cooked rice noodles into serving bowls and ladle the hot broth and vegetables over the noodles.
  5. Garnish with chopped green onions and serve hot.
