Xiaolongxia (chili Crab)
Xiaolongxia, also known as Chili Crab, is a popular dish in Cantonese cuisine. It features fresh crab cooked in a savory and spicy chili sauce, creating a flavorful and aromatic seafood dish.
Ingredients
- 2 lbs live crabs
- 3 tbsp vegetable oil
- 5 cloves garlic, minced
- 2 red chilies, sliced
- 1 tbsp ginger, minced
- 1/4 cup tomato ketchup
- 1/4 cup chili sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1/2 cup water
- 2 green onions, chopped
Instructions
- Thoroughly clean and prepare the crabs by removing the top shell and gills. Cut the crabs into quarters.
- Heat vegetable oil in a large wok or pan over medium heat. Add garlic, ginger, and red chilies. Sauté until fragrant.
- Add tomato ketchup, chili sauce, soy sauce, sugar, and water to the wok. Stir well to combine.
- Add the crab pieces to the wok and coat them with the sauce. Cover and cook for about 15-20 minutes, stirring occasionally, until the crab is cooked through.
- Sprinkle chopped green onions over the crab before serving.
