Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup dried apricots
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1 cup chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic, ground cumin, cinnamon, ginger, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the chicken to the skillet and add the dried apricots and chicken broth. Season with salt and pepper.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 25-30 minutes until the chicken is cooked through and the apricots are tender.
- Serve the Xingzi Ji hot, garnished with fresh cilantro if desired.
