Ingredients

  • 250g shrimp, peeled and deveined
  • 250g scallops
  • 200g squid, cleaned and sliced into rings
  • 3 tbsp XO sauce
  • 2 tbsp vegetable oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 cloves garlic, minced
  • 1 inch ginger, julienned
  • 2 green onions, chopped
  • 1/4 cup chicken broth
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1/2 tsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a wok or large skillet over high heat.
  2. Add garlic, ginger, and green onions, and stir-fry for 1 minute.
  3. Add shrimp, scallops, and squid, and stir-fry for 2-3 minutes until seafood is almost cooked through.
  4. Add XO sauce, bell peppers, chicken broth, soy sauce, sugar, and sesame oil. Stir-fry for another 2-3 minutes until the seafood is fully cooked and the sauce has thickened.
  5. Season with salt and pepper to taste.
  6. Transfer to a serving dish and garnish with additional green onions if desired.
