Ingredients
- 250g shrimp, peeled and deveined
- 250g scallops
- 200g squid, cleaned and sliced into rings
- 3 tbsp XO sauce
- 2 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 4 cloves garlic, minced
- 1 inch ginger, julienned
- 2 green onions, chopped
- 1/4 cup chicken broth
- 1 tbsp soy sauce
- 1 tsp sugar
- 1/2 tsp sesame oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a wok or large skillet over high heat.
- Add garlic, ginger, and green onions, and stir-fry for 1 minute.
- Add shrimp, scallops, and squid, and stir-fry for 2-3 minutes until seafood is almost cooked through.
- Add XO sauce, bell peppers, chicken broth, soy sauce, sugar, and sesame oil. Stir-fry for another 2-3 minutes until the seafood is fully cooked and the sauce has thickened.
- Season with salt and pepper to taste.
- Transfer to a serving dish and garnish with additional green onions if desired.
