Ingredients
- 1 kg octopus, cleaned and cut into pieces
- 4 large potatoes, peeled and diced

- 2 tablespoons chopped fresh parsley
Instructions
- In a large pot, bring water to a boil. Add the octopus pieces and simmer for 40-50 minutes until tender. Drain and let it cool.
- In a separate pot, boil the diced potatoes until tender, then drain and let them cool.
- Once the octopus and potatoes have cooled, place them in a large bowl. Add the sliced red onion, olive oil, red wine vinegar, salt, and pepper. Toss gently to combine.
- Sprinkle the chopped parsley over the salad and toss again to distribute evenly.
- Refrigerate the salad for at least 1 hour before serving to allow the flavors to meld together.
