Xun Ya (smoked Duck)
Xun Ya, or Smoked Duck, is a classic dish in Huaiyang Cuisine, known for its delicate flavors and meticulous preparation.
Ingredients
- 1 whole duck
- 1 cup soy sauce
- 1/2 cup Shaoxing wine
- 1/4 cup sugar
- 2 star anise
- 1 cinnamon stick
- 1 piece dried tangerine peel
- 1 tablespoon Sichuan peppercorns
Instructions
- Clean the duck and pat dry.
- In a large pot, combine soy sauce, Shaoxing wine, sugar, star anise, cinnamon stick, dried tangerine peel, and Sichuan peppercorns.
- Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
- Add the duck to the pot and simmer for 1 hour, turning occasionally.
- Remove the duck and air-dry for 2 hours.
- Smoke the duck over low heat for 30 minutes.
- Serve the smoked duck sliced thinly.
