Ingredients

  • 1 whole duck
  • 1 cup soy sauce
  • 1/2 cup Shaoxing wine
  • 1/4 cup sugar
  • 2 star anise
  • 1 cinnamon stick
  • 1 piece dried tangerine peel
  • 1 tablespoon Sichuan peppercorns

Instructions

  1. Clean the duck and pat dry.
  2. In a large pot, combine soy sauce, Shaoxing wine, sugar, star anise, cinnamon stick, dried tangerine peel, and Sichuan peppercorns.
  3. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes.
  4. Add the duck to the pot and simmer for 1 hour, turning occasionally.
  5. Remove the duck and air-dry for 2 hours.
  6. Smoke the duck over low heat for 30 minutes.
  7. Serve the smoked duck sliced thinly.
