Yabluchnyk (cossack Apple Cake)

Ingredients
- 4 large apples, peeled, cored, and sliced
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, beat the eggs and sugar until light and fluffy.
- Stir in the melted butter and vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Spread half of the batter into the prepared cake pan. Arrange the sliced apples over the batter. Spread the remaining batter over the apples.
- Bake for 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
