Yakitori (grilled Miso-marinated Chicken Skewers)
Yakitori is a traditional Ainu dish of grilled miso-marinated chicken skewers that are bursting with savory and umami flavors. This recipe is perfect for a cozy night in or a gathering with friends and family.
Ingredients
- 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup (60ml) white miso paste
- 2 tablespoons (30ml) soy sauce
- 2 tablespoons (30ml) mirin
- 2 tablespoons (30ml) sake
- 2 tablespoons (30ml) sugar
- 4-5 green onions, cut into 1-inch pieces
- Sesame seeds, for garnish
Instructions
- In a bowl, whisk together the miso paste, soy sauce, mirin, sake, and sugar to make the marinade.
- Add the chicken pieces to the marinade and let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken and green onion pieces onto skewers, alternating between the two.
- Grill the skewers for 6-8 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- Transfer the skewers to a serving platter, sprinkle with sesame seeds, and serve hot.
