Yakitori (grilled Miso-marinated Chicken Skewers)

Ingredients

  • 1.5 lbs (700g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup (60ml) white miso paste
  • 2 tablespoons (30ml) soy sauce
  • 2 tablespoons (30ml) mirin
  • 2 tablespoons (30ml) sake
  • 2 tablespoons (30ml) sugar
  • 4-5 green onions, cut into 1-inch pieces
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, whisk together the miso paste, soy sauce, mirin, sake, and sugar to make the marinade.
  2. Add the chicken pieces to the marinade and let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken and green onion pieces onto skewers, alternating between the two.
  5. Grill the skewers for 6-8 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  6. Transfer the skewers to a serving platter, sprinkle with sesame seeds, and serve hot.
