Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup soy sauce
- 1/4 cup mirin (Japanese sweet rice wine)
- 2 tbsp sake (Japanese rice wine)
- 2 tbsp sugar
- 1 tsp grated fresh ginger
- 8-10 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a small saucepan, combine the soy sauce, mirin, sake, sugar, and grated ginger. Cook over medium heat for 5 minutes, stirring occasionally, until the sugar is dissolved and the sauce is slightly thickened. Remove from heat and let it cool.
- Thread the chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece.
- Preheat the grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
- Place the chicken skewers on the grill and cook for 6-8 minutes, turning occasionally and basting with the prepared sauce, until the chicken is cooked through and has a nice char.
- Transfer the cooked skewers to a serving platter and brush with any remaining sauce. Serve hot and enjoy!
