Yakitori Heaven Skewers (焼き鳥の天国串)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 1/4 cup mirin (Japanese sweet rice wine)
  • 2 tbsp sake (Japanese rice wine)
  • 2 tbsp sugar
  • 1 tsp grated fresh ginger
  • 8-10 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a small saucepan, combine the soy sauce, mirin, sake, sugar, and grated ginger. Cook over medium heat for 5 minutes, stirring occasionally, until the sugar is dissolved and the sauce is slightly thickened. Remove from heat and let it cool.
  2. Thread the chicken pieces onto the soaked bamboo skewers, leaving a little space between each piece.
  3. Preheat the grill to medium-high heat. Brush the grill grates with oil to prevent sticking.
  4. Place the chicken skewers on the grill and cook for 6-8 minutes, turning occasionally and basting with the prepared sauce, until the chicken is cooked through and has a nice char.
  5. Transfer the cooked skewers to a serving platter and brush with any remaining sauce. Serve hot and enjoy!
