Yakitori Yum Yum Rice Bowl (焼き鳥のヤムヤム丼)

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons sake
  • 2 tablespoons sugar
  • 2 cups cooked rice
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds

Instructions

  1. In a small saucepan, combine the soy sauce, mirin, sake, and sugar. Cook over medium heat, stirring occasionally, until the sugar is dissolved and the sauce is slightly thickened. Set aside.
  2. Cut the chicken thighs into bite-sized pieces and thread onto skewers. Grill the chicken skewers on a stovetop grill or in a grill pan over medium-high heat, turning occasionally, until cooked through and slightly charred, about 10-12 minutes.
  3. To assemble the Yakitori Yum Yum Rice Bowl, place a portion of cooked rice in each serving bowl. Top with the grilled chicken skewers, drizzle with the prepared sauce, and sprinkle with sliced green onions and sesame seeds.
