Ingredients
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces

- 2 tbsp mirin (Japanese sweet rice wine)
- 2 tbsp sake (Japanese rice wine)
- 2 tbsp brown sugar
- 1 tsp grated ginger
- 1 tsp minced garlic
- 8 bamboo skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix soy sauce, mirin, sake, brown sugar, ginger, and garlic to make the marinade.
- Add the chicken pieces to the marinade and let it marinate for 15 minutes.
- Thread the marinated chicken pieces onto the soaked bamboo skewers.
- Preheat the grill to medium-high heat and lightly oil the grate.
- Grill the skewers for 3-4 minutes on each side, or until the chicken is cooked through and has a nice char.
- Brush the skewers with the remaining marinade while grilling for extra flavor.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
