Yakitori Yum Yum Skewers (焼き鳥のヤムヤム串)

Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 2 tbsp mirin (Japanese sweet rice wine)
  • 2 tbsp sake (Japanese rice wine)
  • 2 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 tsp minced garlic
  • 8 bamboo skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix soy sauce, mirin, sake, brown sugar, ginger, and garlic to make the marinade.
  2. Add the chicken pieces to the marinade and let it marinate for 15 minutes.
  3. Thread the marinated chicken pieces onto the soaked bamboo skewers.
  4. Preheat the grill to medium-high heat and lightly oil the grate.
  5. Grill the skewers for 3-4 minutes on each side, or until the chicken is cooked through and has a nice char.
  6. Brush the skewers with the remaining marinade while grilling for extra flavor.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving.
