Yam Babala (yambio Yam Stew)
Yam Babala, also known as Yambio Yam Stew, is a traditional dish from South Sudanese Cuisine that is hearty, flavorful, and perfect for a comforting meal.
Ingredients
- 2 large yams, peeled and cubed
- 1 onion, chopped
- 3 tomatoes, diced
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 cups vegetable broth
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the diced tomatoes, ground ginger, paprika, and salt. Cook for 5 minutes, stirring occasionally.
- Add the cubed yams to the pot and pour in the vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 45 minutes, or until the yams are tender.
- Once the yams are cooked, adjust the seasoning if needed and serve the Yam Babala hot.
