Yam Porridge (asaro Delight)
Yam Porridge, also known as Asaro, is a popular Nigerian dish made with yams and a flavorful blend of spices. This hearty and comforting dish is perfect for a cozy family meal or a special occasion.
Ingredients
- 3 cups of yam, peeled and cubed
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 bell pepper, chopped
- 1/2 cup of palm oil
- 1/2 cup of crayfish, ground
- 2 cups of spinach, chopped
- 2 cups of water or vegetable broth
- Salt and pepper to taste
Instructions
- Heat the palm oil in a pot over medium heat.
- Add the chopped onions, tomatoes, and bell pepper. Sauté until the vegetables are soft.
- Stir in the ground crayfish and cook for 2 minutes.
- Add the cubed yam and water or vegetable broth. Season with salt and pepper.
- Cover the pot and simmer for 25-30 minutes, or until the yam is tender.
- Add the chopped spinach and cook for an additional 5 minutes.
- Adjust the seasoning if needed and serve hot.
