Yam Porridge (asaro Delight)

Ingredients

  • 3 cups of yam, peeled and cubed
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 bell pepper, chopped
  • 1/2 cup of palm oil
  • 1/2 cup of crayfish, ground
  • 2 cups of spinach, chopped
  • 2 cups of water or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat the palm oil in a pot over medium heat.
  2. Add the chopped onions, tomatoes, and bell pepper. Sauté until the vegetables are soft.
  3. Stir in the ground crayfish and cook for 2 minutes.
  4. Add the cubed yam and water or vegetable broth. Season with salt and pepper.
  5. Cover the pot and simmer for 25-30 minutes, or until the yam is tender.
  6. Add the chopped spinach and cook for an additional 5 minutes.
  7. Adjust the seasoning if needed and serve hot.
