Ingredients

  • 4 oz. dried glass noodles
  • 1 cup cherry tomatoes, halved

  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, chopped
  • 1/4 cup roasted peanuts, crushed
  • 1/4 cup fresh lime juice
  • 2 tbsp fish sauce
  • 1 tbsp sugar
  • 2 cloves garlic, minced
  • 1-2 Thai chilies, minced

Instructions

  1. Soak the glass noodles in warm water for 10 minutes, then drain and set aside.
