Ingredients

  • 2 large yams, peeled and cubed
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the peanut butter, soy sauce, garlic, and ginger. Set aside.
  2. Heat the vegetable oil in a large pan or wok over medium-high heat.
