Yangrou Tang is a traditional Uyghur lamb and vegetable soup from Xinjiang, China. This hearty and flavorful soup is a staple in Uyghur cuisine and is perfect for warming up on a cold day.
Ingredients
- 1 lb lamb, cut into chunks
- 1 onion, chopped
- 3 tomatoes, diced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 bell pepper, chopped
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/4 tsp cinnamon
- Salt and pepper to taste
- 6 cups water or broth
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the lamb chunks over medium heat.
- Add the chopped onion, garlic, and ginger, and sauté until fragrant.
- Stir in the diced tomatoes, sliced carrots, diced potatoes, and chopped bell pepper.
- Add the cumin, paprika, turmeric, cinnamon, salt, and pepper, and mix well.
- Pour in the water or broth and bring the soup to a boil.
- Reduce the heat to low, cover the pot, and simmer for 2 hours, or until the lamb is tender.
- Adjust the seasoning if needed, then serve the soup hot, garnished with fresh cilantro.
