Ingredients
- 1 lb fresh fish fillets
- 2 tomatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 cups coconut milk
- 4 cups fish or vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp lime juice
- 2 tbsp chopped cilantro
Instructions
- Cut the fish fillets into bite-sized pieces.
- In a large pot, sauté the onion and garlic until fragrant.

- Pour in the coconut milk and broth, then bring to a simmer.
