Ingredients

  • 1 lb fresh fish fillets
  • 2 tomatoes, diced
  • 1 onion, chopped

  • 2 cups coconut milk
  • 4 cups fish or vegetable broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lime juice
  • 2 tbsp chopped cilantro

Instructions

  1. Cut the fish fillets into bite-sized pieces.
  2. In a large pot, sauté the onion and garlic until fragrant.
  3. Add the tomatoes and bell pepper, and cook for 5 minutes.
  4. Pour in the coconut milk and broth, then bring to a simmer.
  5. Add the fish pieces, salt, and black pepper, then simmer for 15 minutes.
  6. Stir in the lime juice and cilantro before serving.
