Yaprak Dolma (stuffed Grape Leaves With Rice)
Yaprak Dolma is a traditional Tajik dish made of grape leaves stuffed with a flavorful mixture of rice, herbs, and spices. This dish is popular in Tajik cuisine and is perfect for a delicious and satisfying meal.
Ingredients
- 1 jar of grape leaves, drained and rinsed
- 1 cup of rice
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1/4 cup of fresh dill, chopped
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1 lemon, sliced
Instructions
- Prepare the filling by combining the rice, onion, tomato, dill, parsley, olive oil, salt, black pepper, cumin, and paprika in a bowl.
- Place a grape leaf on a flat surface, shiny side down. Place a small amount of the filling in the center of the leaf.
- Fold the sides of the leaf over the filling, then roll it up tightly.
- Repeat with the remaining grape leaves and filling.
- Place the stuffed grape leaves in a large pot, seam side down, and layer them tightly.
- Place a few lemon slices on top of the stuffed grape leaves.
- Add enough water to cover the grape leaves, then place a plate on top to keep them submerged.
- Cover the pot and cook over medium heat for 1 hour.
- Once cooked, remove from heat and let it cool before serving.
