Yarsagumba Curry (mountain Mushroom Curry)
Yarsagumba Curry, also known as Mountain Mushroom Curry, is a traditional dish from Sikkimese Cuisine that features the unique and prized Yarsagumba mushroom. This flavorful curry is a delightful combination of earthy mushrooms and aromatic spices, making it a popular choice for a hearty and satisfying meal.
Ingredients
- 200g Yarsagumba mushrooms, cleaned and sliced
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 1 tsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp red chili powder
- 1/2 tsp garam masala
- 2 tbsp vegetable oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Heat vegetable oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute. Then, add the tomato puree and cook until the oil separates.
- Now, add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for a few minutes.
- Add the sliced Yarsagumba mushrooms and mix gently. Cover and cook for 10-15 minutes on low heat.
- Sprinkle garam masala and garnish with fresh coriander leaves before serving.
