Ingredients
- 4 fish fillets (such as tilapia or sea bass)
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup tamarind paste
- 1/4 cup vegetable oil
- 1 teaspoon Dijon mustard
- 1 teaspoon paprika
- Salt and pepper to taste
- 4 cups cooked rice, for serving
Instructions
- In a bowl, mix the sliced onions, minced garlic, tamarind paste, vegetable oil, Dijon mustard, paprika, salt, and pepper to create the marinade.
- Place the fish fillets in a shallow dish and pour the marinade over them. Ensure the fish is well coated. Marinate for at least 1 hour in the refrigerator.
- Preheat the grill to medium-high heat. Remove the fish from the marinade and grill for 5-7 minutes on each side, or until the fish is cooked through and has grill marks.
- While the fish is grilling, pour the remaining marinade into a saucepan and simmer for 5 minutes to create a sauce.
- Serve the grilled fish with the tamarind sauce over cooked rice.
