Yassa Poisson (senegalese Symphony)

Ingredients

  • 4 fish fillets (such as tilapia or sea bass)
  • 4 large onions, thinly sliced
  • 1/2 cup lemon juice
  • 1/4 cup Dijon mustard
  • 1/4 cup vegetable oil
  • 3-4 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the fish fillets, lemon juice, garlic, chili powder, salt, and pepper. Let marinate for 15 minutes.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the sliced onions and cook until soft and golden brown, about 10 minutes.
  3. Push the onions to the side of the skillet and add the marinated fish fillets. Cook for 5-7 minutes on each side, or until the fish is cooked through.
  4. In a small bowl, mix the Dijon mustard with a splash of water to create a sauce. Pour the mustard sauce over the fish and onions in the skillet, and let it simmer for 2-3 minutes.
  5. Serve the Yassa Poisson hot, accompanied by rice or couscous.
