Ingredients
- 4 chicken thighs
- 1 cup onion, thinly sliced
- 1/2 cup lemon juice
- 1/4 cup Dijon mustard
- 1/4 cup vegetable oil
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chicken thighs, onion, lemon juice, Dijon mustard, vegetable oil, garlic, chili powder, salt, and pepper. Marinate for at least 2 hours or overnight in the refrigerator.
- Heat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for 6-8 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add the remaining marinade and cook for 5 minutes until the onions are caramelized and the sauce has thickened.
- Return the chicken to the skillet, coating it with the onion and mustard sauce. Cook for an additional 2-3 minutes to heat through.
