Yassa Poulet (spicy Peanut Butter Chicken)
Yassa Poulet, also known as Spicy Peanut Butter Chicken, is a popular dish in Gambian cuisine. This flavorful and aromatic chicken dish is marinated in a tangy and spicy sauce, then grilled or pan-fried to perfection.
Ingredients
- 4 chicken thighs
- 1 cup onion, thinly sliced
- 1/2 cup lemon juice
- 1/4 cup peanut butter
- 2 tablespoons Dijon mustard
- 4 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large bowl, combine the onion, lemon juice, peanut butter, Dijon mustard, garlic, chili powder, paprika, cayenne pepper, salt, and pepper. Mix well to make the marinade.
- Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Discard the remaining marinade.
- Cook the chicken for 6-8 minutes on each side, or until golden brown and cooked through.
- Serve the Yassa Poulet hot, garnished with sliced onions and a side of rice or couscous.
