Yassa Poulet (spicy Peanut Butter Chicken)

Ingredients

  • 4 chicken thighs
  • 1 cup onion, thinly sliced
  • 1/2 cup lemon juice
  • 1/4 cup peanut butter
  • 2 tablespoons Dijon mustard
  • 4 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions

  1. In a large bowl, combine the onion, lemon juice, peanut butter, Dijon mustard, garlic, chili powder, paprika, cayenne pepper, salt, and pepper. Mix well to make the marinade.
  2. Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Discard the remaining marinade.
  4. Cook the chicken for 6-8 minutes on each side, or until golden brown and cooked through.
  5. Serve the Yassa Poulet hot, garnished with sliced onions and a side of rice or couscous.
