Yassa Poulet (tangy Mango Beef)
Yassa Poulet, also known as Tangy Mango Beef, is a popular dish in Gambian cuisine. This flavorful and tangy dish is made with marinated chicken or beef, cooked with onions, mustard, and a tangy marinade made from fresh mangoes.
Ingredients
- 2 lbs chicken or beef, cut into pieces
- 4 onions, sliced
- 4 tablespoons Dijon mustard
- 4 tablespoons vegetable oil
- 2-3 fresh mangoes, pureed
- 4 cloves garlic, minced
- 1 scotch bonnet pepper, minced
- Juice of 2 lemons
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chicken or beef, onions, Dijon mustard, vegetable oil, mango puree, garlic, scotch bonnet pepper, lemon juice, salt, and pepper. Mix well to coat the meat. Cover and refrigerate for at least 4 hours or overnight.
- Heat a large skillet or pot over medium-high heat. Add the marinated meat and cook until browned, stirring occasionally, about 10 minutes.
- Reduce the heat to low, cover, and simmer for 30 minutes, or until the meat is tender and the sauce has thickened.
- Serve the Yassa Poulet hot with rice or couscous.
