Yassa Poulet (tangy Mango Chicken)

Ingredients

  • 4 chicken thighs
  • 2 ripe mangoes, peeled and diced
  • 4 onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 cup vegetable oil
  • 1/2 cup lemon juice
  • 1 tablespoon Dijon mustard
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced onions, garlic, ginger, lemon juice, Dijon mustard, vegetable oil, diced mangoes, bay leaves, salt, and pepper.
  2. Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
  3. Preheat the grill or a large skillet over medium-high heat. Remove the chicken from the marinade and grill or pan-fry for about 20 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  4. While the chicken is cooking, pour the remaining marinade into a saucepan and simmer for 10-15 minutes until it thickens into a delicious sauce.
  5. Serve the grilled chicken with the mango sauce on the side and enjoy!
