Yassa Poulet (tangy Mango Chicken)
Yassa Poulet, also known as Tangy Mango Chicken, is a popular dish in Gambian cuisine. This flavorful and tangy chicken dish is marinated in a zesty blend of ingredients and then grilled or pan-fried to perfection.
Ingredients
- 4 chicken thighs
- 2 ripe mangoes, peeled and diced
- 4 onions, thinly sliced
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 cup vegetable oil
- 1/2 cup lemon juice
- 1 tablespoon Dijon mustard
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced onions, garlic, ginger, lemon juice, Dijon mustard, vegetable oil, diced mangoes, bay leaves, salt, and pepper.
- Add the chicken thighs to the marinade, making sure they are well coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
- Preheat the grill or a large skillet over medium-high heat. Remove the chicken from the marinade and grill or pan-fry for about 20 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
- While the chicken is cooking, pour the remaining marinade into a saucepan and simmer for 10-15 minutes until it thickens into a delicious sauce.
- Serve the grilled chicken with the mango sauce on the side and enjoy!
