Ingredients
- 1 lb shrimp, peeled and deveined
- 2 ripe mangoes, diced
- 1 large onion, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup vegetable oil
- 1/4 cup lemon juice
- 1/4 cup white vinegar
- 1 scotch bonnet pepper, seeded and minced
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shrimp, diced mangoes, sliced onion, minced garlic, vegetable oil, lemon juice, white vinegar, minced scotch bonnet pepper, Dijon mustard, salt, and pepper. Mix well to ensure the shrimp and mangoes are coated with the marinade. Cover and refrigerate for at least 1 hour.
- Heat a large skillet over medium-high heat. Add the marinated shrimp and mango mixture to the skillet. Cook for 5-7 minutes, or until the shrimp is pink and cooked through.
- Serve the Yassa Poulet hot with steamed rice or couscous.
