Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- 4 onions, thinly sliced
- 4 lemons, juiced
- 1/2 cup vegetable oil
- 1/4 cup white vinegar
- 3 cloves garlic, minced
- 1 tablespoon Dijon mustard
- 1 tablespoon bouillon powder
- 1 teaspoon red pepper flakes
- Salt and pepper to taste
Instructions
- In a large bowl, combine the sliced onions, lemon juice, vegetable oil, white vinegar, minced garlic, Dijon mustard, bouillon powder, red pepper flakes, salt, and pepper. Mix well to create the marinade.
- Add the chicken thighs and drumsticks to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to infuse.
- After marinating, remove the chicken from the bowl and set aside the marinade. In a large skillet or grill pan, heat some oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 6-8 minutes per side.
- While the chicken is cooking, pour the reserved marinade into a saucepan and simmer over medium heat for 10-15 minutes, until the onions are soft and the flavors have melded together to create a delicious sauce.
- Once the chicken is cooked, transfer it to a serving platter and pour the simmered marinade over the top. Serve the Yassa Poulet hot with rice or couscous.
