Yassa Poulet (yassa Chicken Surprise)

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • 4 onions, thinly sliced
  • 4 lemons, juiced
  • 1/2 cup vegetable oil
  • 1/4 cup white vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon bouillon powder
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced onions, lemon juice, vegetable oil, white vinegar, minced garlic, Dijon mustard, bouillon powder, red pepper flakes, salt, and pepper. Mix well to create the marinade.
  2. Add the chicken thighs and drumsticks to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to infuse.
  3. After marinating, remove the chicken from the bowl and set aside the marinade. In a large skillet or grill pan, heat some oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 6-8 minutes per side.
  4. While the chicken is cooking, pour the reserved marinade into a saucepan and simmer over medium heat for 10-15 minutes, until the onions are soft and the flavors have melded together to create a delicious sauce.
  5. Once the chicken is cooked, transfer it to a serving platter and pour the simmered marinade over the top. Serve the Yassa Poulet hot with rice or couscous.
