Yataklete Kilkil (ethiopian Spiced Mushroom Pilaf)
Yataklete Kilkil is a flavorful Ethiopian dish made with spiced mushrooms and pilaf. It's a delicious and aromatic dish that is perfect for a special occasion or a cozy night in.
Ingredients
- 2 cups basmati rice
- 1 lb mushrooms, sliced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp cinnamon
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
- Add the mushrooms to the pot and cook until they release their liquid and start to brown.
- Stir in the turmeric, cumin, paprika, and cinnamon, and cook for another minute to toast the spices.
- Stir in the rice and cook for a couple of minutes, then pour in the vegetable broth. Season with salt and pepper.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Fluff the pilaf with a fork and serve hot.
