Ingredients

  • 2 cups basmati rice
  • 1 lb mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions and garlic, and sauté until softened.
  2. Add the mushrooms to the pot and cook until they release their liquid and start to brown.
  3. Stir in the turmeric, cumin, paprika, and cinnamon, and cook for another minute to toast the spices.
  4. Stir in the rice and cook for a couple of minutes, then pour in the vegetable broth. Season with salt and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Fluff the pilaf with a fork and serve hot.
