Ingredients
- 4 cups plain yogurt
- 6 cups water
- 1/2 cup rice
- 2 eggs
- 2 tablespoons all-purpose flour
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh dill
- Salt to taste
Instructions
- In a large pot, whisk together the yogurt, water, and rice. Bring to a gentle boil over medium heat, stirring occasionally.
- In a separate bowl, beat the eggs and flour until smooth.
- Slowly add a ladle of the hot soup into the egg mixture, whisking constantly to temper the eggs.
- Pour the egg mixture back into the pot of soup, stirring continuously.
- Add the chopped mint and dill to the soup, and season with salt to taste. Simmer for an additional 5 minutes.
- Remove from heat and let the soup cool slightly before serving.
