Ingredients

  • 6 cups water
  • 1/2 cup rice
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh dill
  • Salt to taste

Instructions

  1. In a large pot, whisk together the yogurt, water, and rice. Bring to a gentle boil over medium heat, stirring occasionally.
  2. In a separate bowl, beat the eggs and flour until smooth.
  3. Slowly add a ladle of the hot soup into the egg mixture, whisking constantly to temper the eggs.
  4. Pour the egg mixture back into the pot of soup, stirring continuously.
  5. Add the chopped mint and dill to the soup, and season with salt to taste. Simmer for an additional 5 minutes.
  6. Remove from heat and let the soup cool slightly before serving.
