Ingredients

  • 1 lb boneless lamb, cut into cubes
  • 2 tbsp niter kibbeh (spiced clarified butter)
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1 inch ginger, grated
  • 2 tbsp berbere spice mix
  • 2 cups cabbage, shredded
  • 2 tomatoes, chopped
  • 2 cups beef or vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat niter kibbeh in a large pot over medium heat.
  2. Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Stir in the berbere spice mix and cook for 2 minutes to release the flavors.
  4. Add the lamb cubes and brown on all sides.
  5. Stir in the cabbage and tomatoes, then pour in the broth.
  6. Season with salt and pepper, then cover and simmer for 1 hour, or until the lamb is tender.
  7. Serve the Yebeg Kik Wat hot with injera bread or rice.
