Ingredients
- 1 lb boneless lamb, cut into cubes
- 2 tbsp niter kibbeh (spiced clarified butter)
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 1 inch ginger, grated
- 2 tbsp berbere spice mix
- 2 cups cabbage, shredded
- 2 tomatoes, chopped
- 2 cups beef or vegetable broth
- Salt and pepper to taste
Instructions
- Heat niter kibbeh in a large pot over medium heat.
- Add the onions, garlic, and ginger. Sauté until the onions are soft and translucent.
- Stir in the berbere spice mix and cook for 2 minutes to release the flavors.
- Add the lamb cubes and brown on all sides.
- Stir in the cabbage and tomatoes, then pour in the broth.
- Season with salt and pepper, then cover and simmer for 1 hour, or until the lamb is tender.
- Serve the Yebeg Kik Wat hot with injera bread or rice.
