Yebeg Tibs (ethiopian Spiced Lamb Chops)

Ingredients

  • 1 1/2 lbs lamb chops
  • 2 tbsp olive oil
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp berbere spice
  • 1/2 tsp cumin
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the lamb chops to the skillet and cook for 3-4 minutes on each side, or until browned and cooked to your desired level of doneness. Remove the chops from the skillet and set aside.
  3. In the same skillet, add the sliced onions and sauté until they are soft and golden brown.
  4. Add the minced garlic, grated ginger, berbere spice, cumin, salt, and black pepper to the skillet. Cook for 2-3 minutes, stirring constantly to release the aromas of the spices.
  5. Return the lamb chops to the skillet and toss to coat them in the spice mixture. Cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Sprinkle the chopped cilantro over the lamb chops and remove from heat.
  7. Serve the Yebeg Tibs hot, accompanied by injera or rice.
