Yebeg Tibs (ethiopian Spiced Lamb Chops)

Ingredients
- 1 1/2 lbs lamb chops
- 2 tbsp olive oil
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp berbere spice
- 1/2 tsp cumin
- Salt to taste
- Freshly ground black pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the lamb chops to the skillet and cook for 3-4 minutes on each side, or until browned and cooked to your desired level of doneness. Remove the chops from the skillet and set aside.
- In the same skillet, add the sliced onions and sauté until they are soft and golden brown.
- Add the minced garlic, grated ginger, berbere spice, cumin, salt, and black pepper to the skillet. Cook for 2-3 minutes, stirring constantly to release the aromas of the spices.
- Return the lamb chops to the skillet and toss to coat them in the spice mixture. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Sprinkle the chopped cilantro over the lamb chops and remove from heat.
- Serve the Yebeg Tibs hot, accompanied by injera or rice.
