Yemeni Flatbread with Za'atar (Khubz Ma'ajoun)

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 tablespoon active dry yeast
  • 1 cup warm water
  • 3 tablespoons olive oil
  • 1/4 cup za'atar spice blend

Instructions

  1. In a large bowl, combine the flour, salt, and sugar.
  2. In a small bowl, dissolve the yeast in warm water and let it sit for 5 minutes until foamy.
  3. Add the yeast mixture and olive oil to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  5. Divide the dough into 6 equal pieces and roll each piece into a thin circle.
  6. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown and puffed.
  7. Sprinkle each flatbread with za'atar while still warm.
